Why is fresh extra virgin olive oil so important? Unlike wine, extra virgin olive does not get better with age. Extra virgin olive oil is at its best up to 12 months after harvest. Both taste and health benefits start to deterioate after this period. The cold climate oils tend to have a longer shelf life and hold their flavour due to the high levels of polyphenols.
